EATS | MAMA MIA! ITZA TORT-IZZA
Kids are out of school, and that means one thing: snacks, snacks, and more snacks.
It’s a balancing act to give kids something to eat that they’ll like, and that’s good for them. Add to that the need to prepare something that’s quick and easy, or, better yet, offer up a dish that they can safely make.
The whole family will love our Mama Mia! Itza Tort-izza, the best of two world. It uses prepared, pre-cut, and pre-grated ingredients, so no knife is needed. Also, the pizza cooks in a microwave, so kid don’t have to use an oven. Here’s how you make it:
Place a large tortilla on a microwave safe plate and heat in the microwave for 30 seconds. Carefully flip, and microwave for an additional 30 seconds. Again, carefully flip, and microwave for 30 seconds more. Remove and allow to sit an additional minute to crisp.
Spread on 4 heaping tablespoons of tomato paste or pasta sauce.
Next add vegetables, if desired. You can add 1-2 tablespoons of vegetables like pre-chopped or sliced bell peppers, mushrooms, or zucchini. Have fun and consider adding a few pineapple chunks.
Then sprinkle on 2 tablespoons pre-grated cheese, like mozzarella
If you want, add meat. Consider a few slices of bacon, crumbled, a sausage patty, crumbled, or a half-dozen or so slices of regular or turkey pepperoni. Don’t overcrowd the pizza or it will become flimsy.
Place back in microwave and heat for an additional 30-40 seconds, or until the cheese melts.
