Recipe Remixx – Buttermilk Waffles

Taken from a page in her family’s recipe book, Nina Monqiue shows you how to make these delicious Buttermilk Waffles, great for breakfast, brunch or any time of day.

Nina Chantel Monique – Creator & Founder, Recipe Remixx  (1:13) Hey, guys, welcome to Recipe Remixx. It’s your girl Nina Monique, and today we are looking through my family’s cookbook. And one of my favorite recipes is Buttermilk Waffles. Now, this is a staple in my family. We make it every Christmas with chicken. Come on, let me tell you how to make it.

(1:32) Now, this is such a great recipe. If you have a waffle iron, you will be making these every single weekend. Brunch! What? This is where it’s at. Let me show you how easy it is. We’re going to start off with two cups of flour. I’ve got baking soda. We’ll add that to the dry… I’ve got four tablespoons of sugar. Let’s go ahead and add that to your ingredients.

(2:00) I also have some melted butter and a couple of eggs. Let me show you what we do with the eggs. Typically, let’s crack the eggs first. So according to this recipe, which is passed down from my great grandma, Nana is what I used to call her, always have your whites and your yellow separate and we’re going to beat the whites. And I used a little water bottle to get these guys out. S

So let me show you how you’re going to do it. You’re just going to add a little pressure, suck this guy out and put to the side. Whoops, we’re definitely going to use this. But let’s try again. Watch. Now take a fork and just start whisking away.

(2:48) Go ahead and keep whisking your white. That’s all good. Who needs Gold’s Gym baby, it’s all right here. A little bit of foamy like this. This is what’s going to give the waffles a little bit of fluffiness. This is where it’s at. So go ahead and add that into our dry along with the rest of the eggs, some melted butter and the buttermilk.

(3:25) All right. Let’s go ahead and give it a mix. Go ahead and mix it up real good. You are going to love this. Don’t forget your vanilla and a pinch of salt. All right, once it’s mixed, we’ll get our waffle iron warmed up. Going to turn mine all the way somewhere in the middle. Let it get warm.

(3:59) So our batter is done. Now we got to get our waffle iron preheated and make sure you spray with a little spray liberally. Now, don’t overcrowd this waffle iron, just a little bit. You don’t want to overdo it. So, start in the middle, kind of spread it out, maybe just a dab more. And it looks like it’s not going to be enough. But trust me, it will expand once you close and this little light is going to tell us when it’s ready.

(4:43) Alright. I believe our first is ready. Let’s take a look. Oh, yes. Perfect. Next time we’ll add a little bit more. But just go ahead and take a fork and put it on over to a plate. Let’s do it again.

(5:03) Alright guys. So easy. Like I said, cooking should not be a chore. We just finished four homemade buttermilk waffles, and you can top this thing with anything. You can do fruit. You can do chocolate, banana, and peanut butter. And I’m going to keep it really simple and just add a little bit of butter and syrup topping.

Buttermilk Waffles 

2 cups all-purpose flour
4 tablespoons sugar
1½ tablespoon baking soda
Pinch of salt
1¾ cup buttermilk
6 tablespoons melted butter
2 eggs – separated
2 teaspoons vanilla

Heat waffle iron.
In a large bowl, combine dry ingredients.
In large measuring cup, mix buttermilk, oil, egg yolks and vanilla liquid. Then stir liquid ingredients into flour mixture.
Beat egg whites and fold into batter.
Add batter to waffle iron.
