Virginia Eats and Drinks FALL!

It’s always great to join my friends  at Living 757 with all the good eats and good drinks going on in Coastal Virginia.

September is a very special month with autumn here and cooling temperatures on the horizon. It’s a great time to celebrate, which is also National Breakfast Month, with our Creamy Avocado Toast and Rum-kin Spice-tini. Here’s how you make them.

DRINKS | RUM-KIN SPICE-TINI

For Virginia Spirits Month

We love autumn with all the fabulous flavors and tasty traditions, including pumpkin spice.

Beyond a coffee drink, try using this spice blend in our Rum-Kin Spice-tini. The drink is rich and delicious, and best of all, uses local spirits. September also just happens to be Virginia Spirits Month. The rum we use in this segment is Chick’s Beach Rum from Chesapeake Bay Distillery in Virginia Beach.

Here’s how to make our Rum-Kin Spice-Tini:

In a cocktail shaker filled with ice, add 1-1/2 ounces white rum, 3 ounces almond milk, 1 teaspoon real maple syrup, and a dash of pumpkin spice. Shake well to incorporate and strain into a martini glass. Garnish with another sprinkle of pumpkin spice.

You can use a prepared pumpkin spice blend, or make your own. Here’s how:

In a medium-sized bowl, add 4 teaspoon ground cinnamon. 1 teaspoon ground ginger, 1 teaspoon ground nutmeg and 1/4 teaspoon ground cloves and stir to incorporate. Use in baking, to season, or stir a spoonful in a latte. This stores great in an airtight container, and the recipe can easily be doubled or tripled.

EATS | CREAMY AVOCADO TOAST

For National Breakfast Month

Avocado toast has been a popular breakfast and brunch dish for more than a decade now, and why not? The crisp toast is a perfect platform for a rich and creamy, nutrient-packed topping of avocado spread. In fact, there are some 20-plus minerals and vitamins in avocados, which was once called alligator pears.

Enjoy our Creamy Avocado Toast sans toppings, or add steamed and chilled shrimp, chilled fried chicken pulled into shreds, chopped herbs, and more. You could even add a fried egg.

Here’s how to make our Creamy Avocado Toast:

Scoop out the flesh of four avocados and mash until creamy with the tines of a fork. Add 1 cup plain Greek yogurt, 2 teaspoons fresh squeezed lime juice, 1 teaspoon coarse salt, 1/2 teaspoon garlic powder, and 1/2 teaspoon crushed red pepper. Stir to incorporate and adjust seasonings to taste. 

Toast four pieces of thickly sliced artisan bread and evenly spread avocado mixture on top.
