Family Meal Planning Made Easy with Meat Sauce & Stuffed Peppers

Cooking from the Heart meat sauce stuffed peppers

Sausage “Bolognese”

Ingredients:

1 lb ground sausage (sweet, mild or spicy -it’s up to you!)

1 -14.5 oz can of diced tomatoes

½ -15 oz can of tomato sauce

½ tsp sugar

Directions:

Brown sausage in a skillet over medium high heat. When browned, drain grease, but keep sausage in skillet. Add diced tomatoes, tomato sauce and sugar. Let simmer 15 minutes. Serve over pasta, or use as a base in many other delicious recipes.

Stuffed Peppers

Ingredients:

1 sausage Bolognese recipe

4 Large green bell peppers

1 Tbs Olive oil

2 cups of cooked rice

½ cup shredded parmesan cheese

Salt and pepper to taste

Directions:

Preheat oven to 350

Cut the tops off, then scrape remaining veins and seeds from the 4 green peppers.

In a medium sized bowl, mix nearly equal parts (if you like, you can go a bit heavier on the Sausage Bolognese) of the rice and Sausage Bolognese.

Brush peppers with olive oil, sprinkle with salt and pepper and place them in an 8 x 8 baking dish, or whichever size necessary to ensure the warm air circulates around the peppers. If the peppers touch each other in the pan, any parts touching will not cook as evenly as the rest of the peppers.

Top peppers with shredded cheese, then bake for 40-45 minutes or until the peppers are fork tender. If you prefer, you can leave the cheese off until the last 15 minutes of baking. You can put the pepper tops in the oven at the beginning of the bake as well, then use them as a lovely garnish to top the peppers when serving!
